Hummus

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

Stir in the canned tomatoes (with their juice) and the vegetable broth. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes.

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth.

Stir in the heavy cream, salt, black pepper, and chopped basil. Heat through for another 5 minutes, but do not boil.

In a food processor, combine canned chickpeas, tahini, lemon juice, garlic, olive oil, cumin, and salt. Blend until smooth, adding water as needed to achieve desired consistency. Adjust seasoning to taste.

In a skillet over medium heat, cook the ground beef until browned. Add paprika, black pepper, and a pinch of salt. Cook for an additional 3-5 minutes until the beef is fully cooked and seasoned.

Spread the hummus on a serving plate and top it with the cooked beef. Garnish with chopped fresh parsley.

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

If the hummus is too thick, add a little more water and blend again until you reach your desired consistency.
