Prepare the Mixed Greens Salad

In a large bowl, combine mixed greens, cherry tomatoes (halved), sliced cucumber, and thinly sliced red onion.

Make the Dressing

In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until blended.

Toss the Salad

Drizzle the dressing over the salad and toss gently to combine. Serve immediately or refrigerate until ready to serve.

Caesar Salad Option

Prepare the Caesar Salad

In a large bowl, add romaine lettuce (chopped), Caesar dressing, Parmesan cheese (grated), and croutons.

Toss the Salad

Toss the ingredients together until the lettuce is well coated with dressing. Serve immediately.

Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until onion is translucent.

Add Remaining Vegetables

Stir in diced carrots and celery, cooking for another 5 minutes until slightly softened.

Add Broth and Tomatoes

Pour in vegetable broth and add the can of diced tomatoes (with juice). Bring to a boil.

Simmer the Soup

Reduce heat to low and let simmer for about 20 minutes.

Add Spinach and Season

Stir in spinach, salt, pepper, and Italian herbs. Cook for an additional 5 minutes until spinach is wilted.

Serve the Soup

Ladle the soup into bowls and serve hot with your choice of salad.
