Method
Cook the Pasta
Boil Water
In a large pot, bring water to a boil. Add a generous amount of salt.
Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.
Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water. Then, drain the spaghetti and set aside.
Prepare the Sauce
Cook Pancetta
In a large skillet over medium heat, add the pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.
Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs and grated Parmesan cheese until well combined. Season with black pepper.
Combine and Serve
Combine Spaghetti and Pancetta
Add the drained spaghetti to the skillet with the cooked pancetta. Mix well to combine.
Garnish and Serve
Serve immediately, garnishing with fresh parsley and additional black pepper to taste.
