Preheat the Oven

Preheat your oven to 200°C (400°F) to prepare for roasting the mushrooms.

Prep the Ingredients

Clean the wild mushrooms thoroughly and chop them into bite-sized pieces. Peel and finely chop the garlic cloves and shallots.

Mix Aromatics

In a bowl, combine the chopped garlic, shallots, and thyme leaves. Set aside.

Prepare Cheese

Cube the Taleggio cheese and slice the Mozzarella cheese. Grate the Pecorino cheese and set all cheeses aside.

Roasting

Toss Ingredients

In a large mixing bowl, add the wild mushrooms, prepared garlic, shallots, and thyme mixture. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.

Spread on Baking Tray

Spread the mushroom mixture evenly on a baking tray lined with parchment paper.

Roast the Mushrooms

Place the baking tray in the preheated oven and roast for about 20 minutes, or until the mushrooms are tender and golden brown.

Add Cheeses

Remove the tray from the oven and sprinkle the cubed Taleggio and grated Pecorino evenly over the roasted mushrooms. Add the sliced Mozzarella on top.

Final Roast

Return the tray to the oven and roast for an additional 10 minutes, or until the cheeses are melted and bubbly.

Remove from the oven and let cool for a few minutes before serving. Enjoy your roasted wild mushrooms warm, garnished with additional fresh thyme if desired.
