Preparation
Prepare the Chicken
Preheat your oven to 400°F (200°C). Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.
Make the Marinade
In a small bowl, mix together the olive oil, minced garlic, juice of the lemon, and chopped fresh rosemary to create a marinade.
Marinate the Chicken
Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes.
Prepare the Asparagus
While the chicken is marinating, trim the tough ends of the asparagus. Drizzle with a little olive oil and season with salt and pepper.
Cooking
Bake the Chicken
Place the marinated chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Cook the Asparagus
While the chicken is baking, heat a skillet over medium heat. Add the asparagus and pour in the vegetable broth. Cover and cook for about 5-7 minutes, until the asparagus is tender but still crisp.
Serve the Dish
Once the chicken is cooked, let it rest for 5 minutes before slicing. Serve the chicken alongside the sautéed asparagus, drizzling any remaining pan juices over the chicken for extra flavor.
