Preparation of Gnocchi
Cook the Gnocchi
In a large pot, bring salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.
Preparation of Pink Vodka Sauce
Sauté Aromatics
In a large saucepan, heat the olive oil over medium heat. Add the minced shallots and cook until translucent, about 3-4 minutes. Add the minced garlic and crushed red pepper flakes, cooking for an additional minute until fragrant.
Add Vodka
Carefully pour in the vodka and let it simmer for about 2-3 minutes to allow the alcohol to cook off.
Incorporate Tomatoes
Stir in the canned crushed tomatoes, salt, and black pepper. Bring the mixture to a simmer and cook for about 10 minutes, allowing the flavors to meld.
Finish the Sauce
Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes until the sauce is creamy and well combined.

Combine Gnocchi and Sauce
Add the cooked gnocchi to the pink vodka sauce and toss gently to coat the gnocchi evenly with the sauce.
Plate the Dish
Spoon the gnocchi onto serving plates. Top with sautéed wild mushrooms, oven-dried tomatoes, and a sprinkle of grated pecorino romano. Garnish with torn basil leaves.
