Cake Base
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until evenly mixed.
Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Incorporate Milk
Gradually add the milk to the batter, mixing until smooth and well combined.
Bake the Cakes
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Cool the Cakes
Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
Frosting
Prepare Frosting
In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing until combined.
Add Cream and Vanilla
Add the heavy cream and vanilla extract to the mixture. Beat until the frosting is fluffy and smooth.
Assembly and Decoration
Layer the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting on top.
Add Second Layer
Place the second cake layer on top of the frosted layer and press down gently.
Frost the Top and Sides
Frost the top and sides of the cake with the remaining frosting.
Decorate
Garnish the cake with fresh berries and mint leaves for a delightful presentation.
