Cook the Spaghetti
In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.
Sauté Shallots and Garlic
In a large skillet, heat olive oil over medium heat. Add the chopped shallots and sauté for about 2-3 minutes until they become translucent. Add the minced garlic and sauté for an additional 1-2 minutes, being careful not to burn the garlic.
Cook the Shrimp
Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Season with salt and black pepper to taste.
Add Wine and Calabrian Chili
Pour in the white wine and add the Calabrian chili paste. Stir to combine and let it simmer for about 3-4 minutes, allowing the flavors to meld together and the sauce to reduce slightly.
Combine with Spaghetti
Add the cooked spaghetti to the skillet, tossing it with the shrimp and sauce. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is reached.
Finish with Parsley
Remove from heat and stir in the chopped Italian parsley. Adjust seasoning with additional salt and pepper if needed.
Serve
Divide the Calabrian shrimp scampi among plates and garnish with additional parsley if desired. Serve immediately.
