Method

Prepare the Kofta

  1. 1

    Make the Kofta Mixture

In a large bowl, combine ground beef, finely chopped red onion, chopped cilantro, minced garlic, ground cumin, ground coriander, cayenne pepper, salt, and black pepper. Mix well until the ingredients are evenly incorporated.

  2. 2

    Form the Kofta

Shape the mixture into elongated patties or skewers, about 4-5 inches long. Refrigerate for at least 30 minutes to help them hold their shape during cooking.

  3. 3

    Cook the Kofta

Preheat a grill or grill pan over medium-high heat. Cook the kofta for about 5-7 minutes on each side, or until browned and cooked through.

Prepare the Wrap

  1. 4

    Assemble the Wrap

On a grilled pita, spread a layer of hummus and tzatziki. Place the cooked kofta on top, followed by sliced tomato and additional cilantro if desired. Roll the pita to enclose the filling.

Prepare the Popcorn

  1. 5

    Pop the Corn

In a large pot, heat olive oil over medium heat. Add popcorn kernels and cover with a lid. Shake the pot occasionally until popping slows down. Once popped, season with salt to taste.
