Method
Prepare the French Toast
Make the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
Add Blueberries
During the last minute of cooking, sprinkle fresh blueberries on top of the French toast to warm them through.
Prepare the Walnut Praline
Cook the Praline
In a saucepan over medium heat, melt the sugar until it becomes a light caramel color. Add walnuts and butter, stirring until the walnuts are evenly coated. Pour onto a parchment-lined baking sheet to cool. Once cooled, break into pieces.
Prepare the Blueberry Coulis
Prepare the Chantilly Cream
Whip the Cream
In a mixing bowl, add heavy cream, powdered sugar, and vanilla extract. Whip with an electric mixer until soft peaks form.
Assemble the Dish
Plate the French Toast
Place slices of the blueberry French toast on a plate. Drizzle with blueberry coulis, top with walnut praline, and add a dollop of chantilly cream.
