Cooking Meatballs

Prepare Meatballs

In a bowl, mix ground beef, bread crumbs, parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into meatballs.

Cook Meatballs

In a skillet, heat olive oil over medium heat. Add meatballs and cook until browned on all sides, about 8-10 minutes. Remove and set aside.

Making Arrabbiata Sauce

Sauté Garlic

In the same skillet, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.

Add Tomatoes

Stir in crushed red pepper flakes and canned crushed tomatoes. Season with salt and pepper. Simmer for 10 minutes.

Combine Sauce and Meatballs

Add cooked meatballs back into the sauce. Simmer for another 5 minutes. Stir in fresh basil.

Making Parmesan Cream

Heat Cream

In a saucepan, heat heavy cream over medium heat until it starts to simmer.

Add Parmesan

Stir in grated parmesan cheese, salt, and pepper. Cook until thickened, about 3-5 minutes.

Preparing Brunch Spuds

In a separate pan, heat olive oil over medium heat. Add diced potatoes, salt, pepper, and rosemary. Cook until crispy and golden, about 15-20 minutes.

Poaching Eggs

Poach Eggs

Bring water to a gentle simmer in a saucepan. Add vinegar. Crack eggs into small bowls and gently slide into the water. Poach for 3-4 minutes until whites are set.

Serve the meatballs in arrabbiata sauce topped with poached eggs and parmesan cream, alongside brunch spuds.
