Method

Preparing the Broth

    Make the Broth

    In a large pot, combine pork bones and water. Bring to a boil and then reduce to a simmer. Add garlic and ginger. Simmer for at least 4 hours, skimming off any foam that rises to the top.

    Add Miso and Chili

    After simmering, strain the broth and return to the pot. Stir in miso paste and chili paste until dissolved. Keep warm.

Marinating the Egg

    Prepare the Eggs

    Boil the eggs for 7 minutes for a soft center. Remove and cool in ice water. In a bowl, mix soy sauce and mirin. Peel the eggs and marinate in the mixture for at least 2 hours.

Cooking Pork and Vegetables

    Cook the Sweet Soy Pork

    In a pan, combine pork belly with soy sauce, mirin, and sugar. Cook over medium heat until caramelized and tender. Slice into pieces.

    Prepare Marinated Bamboo

    In a bowl, mix bamboo shoots with soy sauce and rice vinegar. Let marinate for at least 30 minutes.

    Char the Scallions

    Grill or char the scallions until slightly blackened.

Cooking Noodles

    Cook the Noodles

    In a pot of boiling water, cook ramen noodles according to package instructions. Drain and set aside.

Assembling the Ramen

    Assemble the Bowl

    In a large bowl, place a serving of noodles. Ladle the spicy miso broth over the noodles. Top with sweet soy pork, marinated bamboo, charred scallions, corn, and sliced ramen egg. Serve hot.
