Prepare the Beef Patties
In a bowl, season the ground beef with salt and pepper. Divide the beef into two equal portions and form them into patties about 1-inch thick. Make a slight indentation in the center of each patty to prevent it from puffing up while cooking.

Cook the Patties
Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side. Flip the patties, and place a slice of aged white cheddar on top of each patty. Continue cooking for another 4-5 minutes, or until the cheese is melted and the patties reach your desired level of doneness.

Toast the Buns
While the patties are cooking, cut the brioche buns in half and toast them lightly on the grill or in a toaster until golden brown.
