Pasta Preparation

    Cook the Pasta

    In a large pot of salted boiling water, add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Chop the Vegetables

    While the pasta is cooking, wash and chop the bell pepper, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and prepare the broccoli florets.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped bell pepper, zucchini, carrot, and broccoli. Sauté for 5-7 minutes until the vegetables start to soften.

    Add Spinach and Tomatoes

    Add the cherry tomatoes and spinach to the skillet. Continue cooking for another 3-4 minutes until the spinach wilts and the tomatoes are slightly softened.

    Combine with Pasta

    Pour the vegetable broth into the skillet, then add the cooked pasta. Stir to combine everything well. Season with salt and black pepper to taste.

Serving

    Garnish and Serve

    Remove the skillet from heat, sprinkle the grated Parmesan cheese over the pasta, and toss gently. Garnish with chopped fresh basil. Serve immediately.
