    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper.

    Mix in the Sparkling Water

    Gradually whisk in the cold sparkling water until the batter is smooth and thick. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is well coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

For the Chips

    Prepare the Potatoes

    Peel the potatoes and cut them into thick chips (about 1/2 inch wide).

    Soak the Chips

    Soak the cut chips in cold water for at least 30 minutes to remove excess starch.

    Drain the soaked chips and pat them dry with paper towels.

    In a separate deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the chips in batches for about 5-6 minutes until they are soft but not yet browned. Remove and drain on paper towels.

    Double Fry the Chips

    Increase the oil temperature to 375°F (190°C). Fry the chips again in batches for 2-3 minutes until golden and crispy. Remove and season with salt.

For the Tartar Sauce

    In a bowl, combine mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Mix well.

    Chill the Sauce

    Refrigerate the tartar sauce for at least 15 minutes before serving to allow the flavors to meld.
