Method
Cook Pasta
Prepare the Water
In a large pot, bring salted water to a boil.
Cook Spaghetti
Add the spaghetti to the boiling water and cook according to the package instructions until al dente, usually around 8-10 minutes.
Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water.
Drain Pasta
Drain the spaghetti and set aside, keeping it warm.
Prepare Sauce
Cook Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.
Mix Eggs and Cheese
In a bowl, whisk together the eggs and grated Parmesan cheese until well combined.
Combine Ingredients
Once the pancetta is cooked, add the drained spaghetti to the skillet and toss to combine.
Season
Season with freshly cracked black pepper and salt to taste.
Serve
Plate the Dish
Serve the spaghetti carbonara immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
