Preparation

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator.

    Prepare the Rice

    In a medium saucepan, combine the rice, water, and salt. Bring to a boil over high heat.

    Cook the Rice

    Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Vegetables

    While the rice is cooking, wash and slice the zucchini and bell peppers. Trim the ends of the asparagus.

    Grill the Vegetables

    In a large skillet or grill pan, heat olive oil over medium-high heat. Add the zucchini, bell peppers, and asparagus. Season with salt and black pepper, and grill for about 5-7 minutes, until tender and slightly charred.

    Grill the Salmon

    Preheat the grill to medium-high heat. Remove salmon from the marinade and place on the grill. Cook for about 4-6 minutes per side, or until the salmon flakes easily with a fork.

Serving

    Plate the Dish

    On each plate, serve a portion of grilled salmon alongside the grilled seasonal vegetables and a scoop of rice. Garnish with a slice of lemon if desired.
