Method
Preparing the Calamari

Clean the Calamari
If using whole calamari, clean and cut the body into rings. Ensure all skin and innards are removed. Rinse under cold water and pat dry.

Prepare the Breading Station
In one bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk the eggs and buttermilk together.

Coat the Calamari
Dip each calamari ring into the egg mixture, then coat it thoroughly in the flour mixture. Shake off excess flour.
Frying the Calamari

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in small batches. Fry for about 2-3 minutes or until golden brown and crispy.

Drain and Serve
Remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil. Season with additional salt if desired.
Making the Spicy Aioli

Combine Ingredients
In a small bowl, mix together the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt. Adjust the salt to taste.

Transfer the spicy aioli to a serving bowl and serve alongside the crispy calamari.
