Combine and heat

In a small saucepan, combine 2 cups apple cider, 1 cup water, 2 tablespoons honey, 1 tablespoon fresh lemon juice, 1 teaspoon ground cinnamon, and 4 whole cloves.

Simmer

Warm the mixture over medium heat until it reaches a gentle simmer (do not boil) — about 5 to 7 minutes. Stir occasionally to dissolve the honey and bloom the spices. This allows the cloves and cinnamon to infuse the cider.

Taste and adjust

Taste the hot cider base and adjust sweetness or acidity as desired: add up to 1 tablespoon more honey for sweetness or another 1/2 teaspoon lemon juice for brightness. Remove from heat.

Strain

Using a fine mesh strainer, strain the hot cider into a heatproof measuring cup or directly into serving mugs to remove the cloves and any large spice pieces.

Assemble & Serve

Add bourbon

Divide the strained hot cider between two heatproof mugs (about 1 1/2 cups each). Add 1 ounce (approx. half of 2 oz total) of Maker's Mark bourbon to each mug (2 oz total for recipe).

Garnish and finish

Stir gently to combine. Garnish each mug with a cinnamon stick and an apple slice. If using, float a star anise for additional aroma. Let sit 30 seconds so garnish aromas bloom, then serve hot.

Safety note

Serve hot beverages carefully — let cool slightly before drinking and keep out of reach of children. Adjust alcohol amount for non-alcoholic version by omitting bourbon and adding extra apple cider or a splash of apple brandy substitute if desired.
