Preheat and prepare
Preheat the oven to 220°C (425°F). Line two baking sheets with parchment paper or lightly grease them. Place a wire rack on one sheet if you have one — baking on a rack improves airflow and crispness.
Cut sweet potatoes
If you haven't already, peel the sweet potatoes. Cut each potato into even 1/4- to 1/2-inch thick sticks (matchstick or fry shape). Aim for uniform size so they cook evenly. Pat the cut fries dry thoroughly with clean kitchen towels or paper towels to remove surface moisture.
Coat with cornstarch
Place the dried sweet potato sticks in a large bowl. Sprinkle the 2 teaspoons of cornstarch over the fries and toss to coat evenly. The cornstarch creates a light crust that helps crisp the fries.
Season and oil
Add the 2 tablespoons of olive oil to the bowl and toss to coat each fry lightly. In a small bowl mix the smoked paprika, garlic powder, ground cumin, 1 teaspoon salt, and 1 teaspoon black pepper; sprinkle the spice mix over the fries and toss until evenly distributed.
Arrange on baking sheets
Spread the fries in a single layer across the prepared baking sheets, making sure they do not overlap. Use both sheets if needed; crowded fries will steam rather than crisp. If using a rack, place fries on the rack over the sheet.
Bake and rotate
Bake for 12 minutes, then rotate the pans between racks and flip the fries with a spatula so they brown evenly. Continue baking another 10–15 minutes until edges are golden and crisp. Total baking time will be about 22–27 minutes depending on thickness. Keep an eye after 18 minutes to avoid burning.
Finish
If you like extra crispness, switch the oven to broil (grill) for 1–2 minutes, watching closely, until lightly blistered — this step is optional. Remove fries from the oven and immediately taste for seasoning; sprinkle a light pinch more salt if needed.
Optional finishing & dipping
If using a dipping sauce, combine ketchup or chipotle mayo with the optional teaspoon of lemon juice to brighten the flavor and serve alongside the fries.
Serve immediately for best texture. Leftovers can be reheated in a single layer on a baking sheet at 200°C (400°F) for 8–10 minutes to re-crisp.
