Make waffle batter

In a medium bowl, whisk the waffle mix (or flour base) with eggs, milk, melted butter, vanilla, and salt until just combined. Do not overmix — a few small lumps are fine.

Preheat waffle iron

Preheat a Belgian waffle iron according to manufacturer's instructions and lightly grease with nonstick spray or brush with neutral oil.

Cook waffles

Divide batter into four 1/2-cup portions (adjust based on your waffle iron size) and cook until deep golden and crisp, about 3–5 minutes per waffle. Transfer to a wire rack in a warm (200°F / 95°C) oven to keep crisp while finishing other components.

Optional finish

Lightly dust one side of each waffle with powdered sugar if using, just before assembling for a subtle sweetness contrast.

Beef Patties & Seasoning

Form patties

Divide the ground beef into two equal portions (about 8 oz each). Gently form into patties slightly wider than the waffles (about ¾ inch thick). Make a shallow dimple in the center of each patty with your thumb to promote even cooking. Season both sides with kosher salt, black pepper, and a light brush of Worcestershire sauce.

Cook patties

Heat a large cast-iron skillet or griddle over medium-high heat and add 1 tablespoon neutral oil. When shimmering, add patties and cook without moving 3–4 minutes until a brown crust forms. Flip and cook another 3–4 minutes for medium (adjust for desired doneness). In the last minute of cooking, place two cheddar slices on each patty and cover with a lid or tent with foil to melt the cheese.

Rest patties

Transfer cooked patties to a plate and let rest for 3 minutes to redistribute juices.

Cook bacon

While patties cook, place bacon strips in a cold skillet and cook over medium heat, turning occasionally, until crisp (about 8–10 minutes). Drain on paper towels.

Fry eggs

In a small nonstick skillet over medium-low, melt 1 tablespoon butter. Crack two eggs and fry sunny-side up (or over-easy if preferred) until whites are set but yolks remain runny, about 3–4 minutes for sunny-side. Season with a pinch of salt and pepper.

Make maple mayo

In a small bowl, whisk together mayonnaise, Dijon mustard, and 1 tablespoon of maple syrup. Adjust seasoning with salt and pepper to taste.

Warm waffles with syrup

Just before assembling, brush the waffle tops lightly with remaining maple syrup (or serve syrup at table). If waffles have cooled, warm in a toaster oven or skillet for 1–2 minutes to refresh crispness.

Assemble burgers

Place one waffle (syrup side up if brushed) on a plate as the bottom 'bun.' Spread about 1 tablespoon maple mayo on the waffle. Add a handful of arugula, then the cheeseburger patty. Top the patty with three bacon slices, then the fried egg. Place the second waffle on top (syrup side down or dusted). If desired, drizzle an additional teaspoon of maple syrup over the egg or serve syrup on the side. Add hot sauce to taste if using.

Serve the Brunch Burger immediately while waffles are warm and patties hot. Provide extra maple syrup and hot sauce on the side. Recommended serving: one assembled burger per person with a side of home fries or a small green salad.
