Burger Patties
Portion and form
Divide the 24 oz of Black Angus ground beef into four equal portions of 6 oz (by weight). Gently form each portion into a loose round patty about 3.5–4 inches in diameter and roughly 3/4 inch thick. Avoid overworking the meat to keep patties tender.
Create the dimple
Using your thumb, press a shallow 1/2-inch dimple into the center of each patty to prevent excessive doming while cooking.

Grill the patties
Place patties on the hot surface and cook without moving: 3.5–4 minutes on the first side to develop a crust. Flip once and cook 3–4 minutes on the second side for medium-rare to medium (internal temp 130–140°F / 54–60°C). For medium-well, add 1–2 minutes. During the last 60–90 seconds of cooking, place a slice of sharp cheddar on each patty and cover the pan or close the lid to melt cheese.
Add butter for jus
Optional: during the last minute, add the 1 tbsp softened butter on top of each cooked patty to melt and mingle into the jus for extra richness.
Condiments
Make the garlic mayo: In a small bowl, combine 1/2 cup mayonnaise, minced garlic clove, 1 tsp Dijon mustard, 1/2 tsp lemon juice, 1/4 tsp salt, and a pinch (1/8 tsp) black pepper. Whisk until smooth. Taste and adjust seasoning. Chill until assembly.

Prepare vegetables
Slice the beefsteak tomato into 1/4-inch rounds (about 4 slices). Slice the red onion into thin rings. Rinse and pat dry lettuce leaves. Have the dill pickle slices ready.
Assemble the Bistro Burger
Spread about 1 tablespoon of the garlic mayo on the bottom half of each toasted bun. Place a lettuce leaf, then the cheddar-topped patty, two tomato slices, 2–3 rings of red onion, and two dill pickle slices. Finish with another small smear of garlic mayo on the top bun and close the burger.
Rest and serve
Allow assembled burgers to rest 1–2 minutes so juices redistribute. Serve immediately while hot, paired with fries, a simple salad, or a beer of choice.
