Prep cheese

Grate the sharp cheddar and Gruyère and toss them together in a bowl with the 2 tablespoons of all‑purpose flour. The flour helps stabilize the cheese and reduce stringiness.

Prepare pot

Rub the inside of a fondue pot or a heavy‑bottomed saucepan with the cut sides of the garlic clove, then discard the garlic (or leave it in for extra flavor). Place the pot over medium heat.

Warm liquid

Add 1.25 cups cold lager and 1/2 cup dry white wine (or extra lager if not using wine) to the pot. Heat gently until the liquid is hot but not boiling — small bubbles should form at the edges (about 3–4 minutes). Do not let it boil.

Add cheese gradually

Reduce heat to low. Add the cheese in small handfuls, stirring constantly in a figure‑eight motion with a wooden spoon or silicone spatula. Wait until each addition melts and the mixture is smooth before adding more. This should take about 6–8 minutes in total.

Finish and season

Once the cheese is fully incorporated and silky, whisk in 1 teaspoon lemon juice, 1 teaspoon Dijon mustard, 1/2 teaspoon Worcestershire sauce, and 1 teaspoon kirsch or brandy (if using). Season with 1/2 teaspoon freshly ground black pepper and 1/8 teaspoon freshly grated nutmeg. Keep the mixture on very low heat, stirring occasionally to maintain smoothness.

Adjust consistency

If the fondue is too thick, whisk in up to 2 tablespoons additional warm lager, 1 tablespoon at a time, until you reach a smooth, dippable consistency. If it becomes grainy, continue stirring over very low heat — do not overheat.

Transfer to heat source

Transfer the fondue pot to a tabletop burner or fondue stand with a low flame or tea light. Keep it at a gentle simmer so it stays smooth for serving.

Dippers & Garnish

Prepare bread and potatoes: If not already done, cut the bread into 1‑inch cubes and boil small potatoes until just tender. Keep potatoes warm.

Arrange dippers: Place bread cubes, warm baby potatoes, cornichons, apple or pear slices, and sliced cured sausage on a large platter around the fondue pot.

Garnish and serve: Sprinkle 2 tablespoons chopped chives or parsley over the fondue or dippers for color. Provide fondue forks or long skewers. Encourage guests to spear a dipper, swirl in the cheese, and eat directly from the fork or transfer to a plate.
