    Prepare the Ingredients

    Gather all your ingredients, and chop the bell pepper and onion into small pieces.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together. Add salt and black pepper to taste.

    Cook the Vegetables

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Add the chopped bell pepper and onion, cooking until they are soft, about 3-4 minutes.

    Combine Ingredients

    Add the diced ham to the skillet and cook for an additional 2 minutes until heated through. Pour the whisked eggs over the mixture and let it cook without stirring for about 2-3 minutes.

    Add Cheese and Finish Cooking

    Sprinkle the shredded cheddar cheese over the top. Once the edges start to set, gently lift them with a spatula to allow uncooked egg to flow underneath. Once the eggs are set to your liking, fold the omelette in half and slide it onto a plate.

    Wash and dice the potatoes into small cubes.

    In a separate skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10-15 minutes, stirring occasionally, until they are golden brown and crispy.

    Add paprika, garlic powder, salt, and black pepper to the potatoes. Stir well and cook for another 2-3 minutes to combine the flavors.
