In a large bowl, combine the pineapple juice, minced garlic, oregano, cumin, chili powder, salt, black pepper, and lime juice. Whisk until well blended.

Place the pork shoulder in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Preheat your grill or oven to 300°F (150°C). Remove the pork from the marinade, allowing excess to drip off. Grill or roast the pork until it reaches an internal temperature of 195°F (90°C), approximately 3-4 hours, turning occasionally.

Remove the pork from the grill or oven and let it rest for 15-20 minutes. Shred the pork using two forks.

While the pork is resting, warm the taco tortillas on a skillet over medium heat for about 30 seconds on each side or until pliable.
