Method

Pulled Pork Preparation

    Prepare the pork

    Rub the pork shoulder with BBQ dry rub thoroughly, covering all surfaces. Place in a smoker or a slow cooker.

    Add liquids

    Pour the apple cider vinegar and water over the pork. If using a smoker, cook at 225°F for about 8-10 hours or until the meat is tender and easily shredded.

    Shred the pork

    Once cooked, remove the pork from the heat and let it rest for 30 minutes. Then shred the pork using two forks.

    Mix with BBQ sauce

    Combine the shredded pork with BBQ sauce, mixing well to coat the meat.

    Assemble sandwiches

    Slice sub rolls open and fill each with a generous amount of pulled pork. Top with coleslaw.

Beer Battered French Fries

    Prepare the fries

    Peel and cut the russet potatoes into thin strips. Soak in cold water for 30 minutes to remove excess starch.

    Make the batter

    In a bowl, mix flour, beer, and salt until smooth. Dip each potato strip into the batter, letting excess drip off.

    Fry the potatoes

    Heat oil in a deep fryer or a large pot to 350°F. Fry the battered potato strips in batches until golden brown, about 3-5 minutes. Drain on paper towels.

Homemade BBQ Sauce

    Mix the sauce

    In a saucepan over medium heat, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, and salt. Stir well and let simmer for 10-15 minutes until thickened.
