    Preheat your oven to 375°F (190°C). Rinse the haddock fillet, shrimp, and scallops under cold water and pat them dry with paper towels. Place them in a large casserole dish, ensuring they are evenly distributed.

Cracker Crumb Breading

    Make the Breading

    In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in cracker crumbs, Parmesan cheese, dried parsley, garlic powder, salt, and black pepper until well combined.

    Apply the Breading

    Sprinkle the cracker crumb mixture evenly over the seafood in the casserole dish, ensuring that all the seafood is coated.

Baking

    Bake the Seafood

    Place the casserole dish in the preheated oven and bake for 25-30 minutes, or until the seafood is cooked through and the crumb topping is golden brown.

    Bake the Potato

    While the seafood is baking, wash and poke holes in the baked potato with a fork. Wrap it in aluminum foil and place it in the oven for the last 30 minutes of baking time.
