Method

Egg Preparation

  1. 1

    Prepare the Egg

In a small skillet, heat 1 tablespoon of butter or oil over medium heat.

  2. 2

    Cook the Egg

Crack the egg into the skillet. Cook to your desired doneness: sunny-side up (2-3 minutes), over-easy (1-2 minutes on the other side), or scrambled (stir continuously until cooked).

  3. 3

    Season

Sprinkle salt and pepper over the egg according to your taste.

Homefries

  1. 4

    Prepare the Potatoes

Peel and dice the potatoes into small cubes. Rinse and drain.

  2. 5

    Cook the Homefries

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally.

  3. 6

    Add Vegetables and Season

Add the diced onion and bell pepper to the skillet. Season with paprika, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender and potatoes are golden brown.

Toast

  1. 7

    Toast the Bread

While the egg and homefries are cooking, toast 2 slices of bread until golden brown.

  2. 8

    Butter the Toast

Spread 1 tablespoon of butter on the hot toast.
