Method

Preparing Corned Beef Hash

    Cook the Onions and Potatoes

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and diced potatoes. Sauté until the potatoes are tender and golden, about 10-15 minutes.

    Add Corned Beef

    Add 1 cup of corned beef to the skillet. Season with salt and pepper. Stir well and cook for an additional 5-7 minutes until the beef is heated through and crispy. Set aside.

Making Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk together 3 egg yolks and 1 tablespoon of lemon juice. Place the bowl over a pot of simmering water, making sure the bowl doesn’t touch the water.

    Add Butter

    Slowly whisk in 1 cup of melted butter, continuing to whisk until the sauce is thick and creamy. Season with 0.25 teaspoon of salt and 0.1 teaspoon of cayenne pepper. Remove from heat and set aside.

Cooking Homefries

    Prepare the Homefries

    In another skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the 2 cups of diced potatoes and season with salt, pepper, and paprika.

    Cook Until Golden

    Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy. Set aside.

Assembling Irish Benedict

    Toast English Muffins

    While the homefries are cooking, toast the 2 English muffins until golden brown.

    Assemble the Dish

    On each toasted muffin half, top with a generous portion of the corned beef hash. Drizzle with hollandaise sauce over the top.

    Serve the Irish Benedict with a side of crispy homefries for a complete meal.
