Preparing the Eggs

    Cook the Eggs

    Heat a non-stick skillet over medium heat and add butter. Crack the eggs into the skillet and season with salt and pepper. Cook to your desired doneness (sunny-side up, over-easy, etc.). Remove from heat and set aside.

Making Home Fries

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. Chop the onion finely.

    Cook the Home Fries

    In a large skillet, heat olive oil over medium-high heat. Add the diced potatoes and chopped onion. Season with garlic powder, paprika, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown and cooked through, about 15-20 minutes.

    Toast the Bread

    While the home fries are cooking, toast the bread slices in a toaster or on a griddle. Spread butter on each slice after toasting.

    If using ham, slice into pieces. If using bacon or sausage, cook them in a skillet according to package instructions until crispy.

    In a mixing bowl, combine flour, baking powder, sugar, and salt. In another bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in blueberries or chocolate chips if desired.
