Prepare the Pie Crust
In a large bowl, mix the flour, sugar, and salt together.

Cut in the Butter
Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing gently until the dough comes together. Avoid overmixing.

Chill the Dough
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Blueberry Filling

Prepare the Filling
In a large bowl, combine the fresh blueberries, sugar, cornstarch, lemon juice, and cinnamon. Gently toss to coat the blueberries evenly.

Set Aside
Let the mixture sit for about 15 minutes to allow the blueberries to release some juice.
Assembling the Pie

Preheat the Oven
Preheat your oven to 425°F (220°C).

Add the Filling
Pour the blueberry filling into the prepared pie crust, spreading it evenly. Dot the filling with small pieces of butter.

Top the Pie
If desired, roll out another piece of dough for the top crust, making slits for steam to escape. Alternatively, leave it open-faced.

Bake the Pie
Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbling.

Allow the pie to cool for at least 2 hours before slicing and serving.
