Method

Main Dish - Irish Beef Stew

    Brown the Beef

    In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and brown on all sides for about 5-7 minutes.

    Sauté Vegetables

    Add the chopped onion, sliced carrots, and minced garlic to the pot. Sauté for another 5 minutes until the onions are translucent.

    Add Potatoes and Seasoning

    Stir in the diced potatoes, bay leaves, thyme, salt, and black pepper. Mix well.

    Add Liquid

    Pour in the beef broth and Guinness beer. Bring the mixture to a boil.

    Simmer

    Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is tender.

Side Dish - Colcannon

    Cook Potatoes

    In a large pot, cover the diced potatoes with water, add salt, and boil until tender, about 15-20 minutes. Drain and set aside.

    Sauté Cabbage

    In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the chopped cabbage and sauté until tender, about 5-7 minutes.

    Mash Potatoes

    Mash the drained potatoes in a large bowl. Add the sautéed cabbage, remaining butter, milk, and season with salt and pepper.

    Mix and Serve

    Mix everything together until smooth. Serve warm, topped with chopped green onions.

Dessert - Irish Soda Bread

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, mix the buttermilk and beaten egg until well combined.

    Form the Dough

    Make a well in the dry ingredients and pour in the wet mixture. Stir until a sticky dough forms.

    Shape and Bake

    Turn the dough onto a floured surface and shape it into a round loaf. Place on a baking sheet and cut a cross on top. Bake for 30-35 minutes or until golden brown.
