Method

Prepare the Seafood

  1. 1

    Prepare the Seafood

Rinse the seafood (haddock, shrimp, clam strips, scallops, and whole clams) under cold water and pat dry with paper towels. This will help the batter adhere better.

  2. 2

    Season the Seafood

Lightly season the seafood with salt and pepper. Let it sit for about 10 minutes to absorb the flavors.

Make the Batter

  1. 3

    Mix the Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Whisk together until well mixed.

  2. 4

    Add Water

Slowly add cold water to the dry mixture while whisking until you achieve a thick, smooth batter that can coat the seafood.

Fry the Seafood

  1. 5

    Heat the Oil

In a large, deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Seafood

Dip each piece of seafood into the batter, allowing excess batter to drip off. Carefully place the battered seafood into the hot oil, frying in batches to avoid crowding. Fry until golden brown, about 3-4 minutes for shrimp and clam strips, and 5-6 minutes for haddock, scallops, and clams. Use a slotted spoon to remove and drain on paper towels.

Prepare the Sides

  1. 7

    Cook French Fries

While frying the seafood, prepare the French fries according to package instructions or fry fresh potatoes until golden brown and crispy.

  2. 8

    Prepare Coleslaw

In a large bowl, mix the coleslaw mix with your favorite dressing until well combined. Adjust seasoning to taste.

  3. 9

    Warm the Rolls

Warm the dinner rolls in the oven for about 5-7 minutes until they are soft and warm.

  4. 10

    Cook Onion Rings

Fry onion rings in the remaining oil until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

Serve

  1. 11

    Plate the Dish

On a large plate, arrange the fried seafood, French fries, a roll, coleslaw, and garnish with onion rings. Serve immediately and enjoy!
