Preparing the Seafood

Prepare the Seafood
Rinse all seafood under cold water and pat dry with paper towels. Cut haddock fillets into serving-size pieces. Leave clam strips, shrimp, scallops, and clams whole.
Making the Batter

Prepare the Batter
In a large mixing bowl, combine flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually whisk in cold water or beer until the batter is smooth and thick, yet pourable.
Frying the Seafood

Heat Oil
In a large, deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Fry the Seafood
Dip each piece of seafood into the batter, allowing excess to drip off. Carefully place the battered seafood in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-5 minutes per side for haddock and shrimp, 2-3 minutes for clam strips and scallops, and 4-5 minutes for whole clams. Remove and drain on paper towels.

Prepare the Potatoes
Peel and cut russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

Fry the French Fries
In a separate pot, heat oil to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels, then sprinkle with salt.
Serving

Arrange the fried seafood and French fries on a serving platter. Serve with lemon wedges and tartar sauce on the side.
