    Thoroughly wash the Russet potatoes under running water to remove any dirt. Peel the potatoes if desired, then cut them into even matchstick shapes, about 1/4 inch thick.

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Heat the Oil

    In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This step is crucial to prevent splattering when frying.

    Fry the Potatoes

    Carefully add the dried potatoes in batches to the hot oil. Fry them for about 4-5 minutes or until they turn golden brown. Avoid overcrowding the pot.

    Drain and Season

    Once cooked, use a slotted spoon to remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, black pepper, and garlic powder to taste.
