Method

Making the English Muffin

    Prepare Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until foamy.

    Mix Ingredients

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and pour in the yeast mixture, milk, and melted butter. Mix until a dough forms.

    Kneading the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

    Shape Muffins

    Punch down the risen dough and roll it out to about 1 inch thick. Use a round cutter to cut out muffins and place them on a baking sheet dusted with cornmeal.

    Second Rise

    Cover the muffins with a cloth and let them rise for another 30 minutes.

    Preheat and Cook

    Preheat a skillet or griddle over medium heat. Cook the muffins for about 8-10 minutes on each side, or until golden brown. You can also bake them in a preheated oven at 375°F (190°C) for 15-20 minutes.

    Let the muffins cool slightly, then slice in half. Toast or grill them as desired. Serve with butter and jelly on the side.
