Prepare Fries

Cook the Fries
Preheat your oven according to the instructions on the frozen French fries package. Spread the fries on a baking sheet in a single layer and bake them until golden brown and crispy, usually about 20-25 minutes. Season with salt to taste once they are done.
Assemble the Grilled Cheese

Butter the Bread
Spread softened butter on one side of each slice of sourdough bread. This will help achieve a golden, crispy crust when grilled.

Layer the Cheese and Pulled Pork
On the unbuttered side of two slices of bread, layer 2 slices of American cheese, 2 slices of Swiss cheese, 1 cup of shredded cheddar cheese, and 1 cup of pulled pork. Top with the remaining slices of bread, buttered side out.

Season the Sandwich
Sprinkle cowboy seasoning evenly on the outside of both buttered sides of the sandwich. This will give the grilled cheese a flavorful crust.
Grill the Sandwich

Heat the Pan
Preheat a large skillet or frying pan over medium heat.

Grill the Sandwich
Place the assembled sandwiches in the skillet. Cook for about 3-4 minutes on one side until golden brown. Carefully flip the sandwich and cook for another 3-4 minutes on the other side, until the cheese melts and both sides are golden brown.
Serve

Cut and Serve
Once grilled to perfection, remove the sandwiches from the skillet. Cut them in half and serve hot alongside the crispy fries.
