    Peel and dice the potatoes into small cubes (about 1/2 inch). Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 10 minutes. Drain and set aside.

    If using leftover corned beef, chop it into small pieces. If using canned corned beef, remove it from the can and break it apart with a fork.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and garlic. Sauté until the vegetables are softened and fragrant, about 5 minutes.
