1. Prepare the Ingredients

Chop the onion, bell pepper, and spinach into small pieces. If the brisket is not already shredded, shred it into bite-sized pieces.

2. Beat the Eggs

In a mixing bowl, crack the eggs and whisk them together. Add salt and black pepper to taste. Mix well until fully combined.

3. Cook the Vegetables

In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and bell peppers. Sauté for about 3-4 minutes until they are soft. Add the spinach and cook for an additional 1-2 minutes until wilted. Remove the mixture from the skillet and set it aside.

4. Cook the Brisket

In the same skillet, add another tablespoon of olive oil and heat over medium heat. Add the shredded brisket and cook for about 2-3 minutes until heated through. Set aside.

5. Make the Omelette

Pour the beaten eggs into the skillet and swirl to evenly coat the bottom. Cook for 2-3 minutes until the edges start to set. Using a spatula, gently lift the edges and tilt the skillet to allow uncooked egg to flow to the edges.

6. Add the Fillings

Once the omelette is mostly set but still slightly runny on top, add the sautéed veggie mixture and shredded brisket on one half of the omelette. Sprinkle cheddar cheese on top.

7. Fold and Serve

Carefully fold the omelette in half over the fillings. Let it cook for another minute to melt the cheese. Slide the omelette onto a plate and serve immediately.
