Beef Brisket

    Prepare the Brisket

    Preheat your smoker to 110°C (225°F).

    Season the Brisket

    In a bowl, mix smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the brisket.

    Smoke the Brisket

    Place the seasoned brisket in the smoker and smoke for about 6-8 hours or until the internal temperature reaches 93°C (200°F).

    Rest the Brisket

    Once cooked, remove the brisket and let it rest for at least 30 minutes before slicing.

    Prepare Beef Broth

    In a pot, heat the beef broth over medium heat until warm.

Hollandaise Sauce

    Melt the Butter

    In a saucepan, melt the butter over low heat until it is completely liquid.

    Whisk Egg Yolks

    In a bowl, whisk together egg yolks, lemon juice, and salt.

    Combine Mixtures

    Slowly drizzle the melted butter into the egg yolk mixture while continuously whisking until the sauce thickens. Add a pinch of cayenne pepper.

    In a large pot, bring water to a gentle simmer and add vinegar.

    Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes until the whites are set but the yolks are still runny.
