Prepare the Beef Brisket
Season the brisket with salt and pepper, then smoke at the same temperature for 10-12 hours, or until it is tender and reaches an internal temperature of 200°F (93°C). Slice the brisket against the grain.
Beer Battered Fries

Prepare the Potatoes
Peel and cut russet potatoes into thick fries. Soak them in cold water for at least 30 minutes, then drain and pat dry.

Make the Batter
In a bowl, mix flour, baking powder, and salt. Gradually whisk in the beer until you have a smooth batter.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip the potato fries into the batter, then fry in batches until golden brown, about 4-5 minutes. Drain on paper towels.
Coleslaw

Prepare the Vegetables
Shred the cabbage and carrots finely. Place in a large bowl.

Mix the Dressing
In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper.

Pour the dressing over the cabbage and carrots. Toss until well coated. Refrigerate for at least 30 minutes before serving.

Mix Dry Ingredients
In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.

Pour the wet ingredients into the dry ingredients and stir until just combined. Spoon batter into a greased muffin tin and bake at 400°F (200°C) for 15-20 minutes or until golden.
