Brisket Preparation

Prepare the Rub
In a bowl, mix together smoked paprika, brown sugar, black pepper, garlic powder, onion powder, salt, and liquid smoke to create a rub.

Rub the Brisket
Apply the rub evenly over the entire surface of the beef brisket.

Smoke the Brisket
Place the brisket in a smoker set to 225°F (107°C) for about 8-12 hours, or until the internal temperature reaches 195°F (90°C).

Rest the Brisket
Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

Combine Ingredients
In a saucepan, mix together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, salt, black pepper, and garlic powder.

Simmer the Sauce
Bring the mixture to a simmer over medium heat, stirring occasionally for about 15 minutes until thickened. Remove from heat.
Sandwich Assembly

Slice the Brisket
Once rested, slice the brisket into thin pieces.

Prepare the Sandwiches
On each bulky roll, layer sliced brisket and drizzle with BBQ sauce. Top with coleslaw.

Serve each sandwich with a side of beer battered fries.
