Method
Making the Biscuits

Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Cut in the cold unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits with a biscuit cutter.

Bake
Place the biscuits on a baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
Preparing the Gravy

Cook Sausage
In a large skillet over medium heat, cook the pork sausage until browned and cooked through, breaking it up as it cooks.

Make Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.

Add Milk
Gradually whisk in the milk, stirring constantly until the gravy thickens, about 5-7 minutes.

Add the black pepper, salt to taste, and ground sage. Stir to combine.

Place a warm biscuit on a plate, top with a generous amount of sausage gravy, and serve with the crispy homefries on the side.
