Preparation of Glass Noodles

    Soak the Glass Noodles

    Place the glass noodles in a bowl of warm water and soak for about 15 minutes until they are softened. Drain and set aside.

Cooking Protein

    Cook the Shrimp

    In a saucepan, bring water to a boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and set aside.

    Cook the Ground Chicken

    In a skillet, heat a little oil over medium heat. Add the ground chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper to taste.

Mixing Ingredients

    Combine Ingredients

    In a large mixing bowl, combine the soaked glass noodles, cooked shrimp, and cooked ground chicken.

    Add Vegetables and Sauce

    Finely chop the onion and cilantro, then add them to the noodle mixture. Drizzle lime juice over the top and mix well. Crush the peanuts and sprinkle them over the dish.

    Toss everything together gently. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
