    Prepare Vegetables

    Peel and dice the onion, potatoes, and carrots. Trim and cut the string beans into 2-inch pieces.

    Measure Ingredients

    Gather all the measured ingredients including coconut milk, yellow curry powder, salt, and black pepper.

Cooking

    Heat Oil

    In a large pot, heat 2 tablespoons of vegetable oil over medium heat.

    Sauté Onion

    Add the diced onion to the pot and sauté for about 5 minutes until they are translucent.

    Add Remaining Vegetables

    Stir in the diced potatoes, sliced carrots, and string beans. Cook for another 5 minutes, stirring occasionally.

    Add Curry Powder

    Sprinkle in 2 tablespoons of yellow curry powder, and stir well to coat the vegetables.

    Add Coconut Milk and Water

    Pour in the 400 ml of coconut milk and 1 cup of water. Stir to combine and bring to a gentle boil.

    Season and Simmer

    Add 1 teaspoon of salt and black pepper to taste. Reduce the heat to low, cover, and let the curry simmer for about 20 minutes, or until the vegetables are tender.

Serving

    Once the vegetables are cooked through, remove from heat and serve warm over rice or with naan bread.
