Preparing the Tofu

Press and Cut the Tofu
Start by pressing the firm tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top. Let it sit for 20-30 minutes. Once pressed, cut the tofu into bite-sized cubes.

Coat the Tofu
In a mixing bowl, add the cornstarch. Toss the pressed tofu cubes in the cornstarch until they are evenly coated. This will help achieve a crispy texture.
Frying the Tofu

Heat the Oil
In a large frying pan or wok, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry the Tofu
Carefully add the coated tofu cubes to the hot oil in a single layer. Fry for about 3-4 minutes on each side or until golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan.

Drain the Tofu
Once fried, use a slotted spoon to remove the tofu from the oil and place it on a plate lined with paper towels to drain excess oil.
Making the Sweet Chili Sauce

Combine Ingredients
In a saucepan over medium heat, combine water, sugar, rice vinegar, minced garlic, red chili flakes, and soy sauce. Stir well to combine.

Simmer the Sauce
Bring the mixture to a gentle boil, then reduce heat and let it simmer for about 5-7 minutes until the sauce thickens slightly.

Cool the Sauce
Remove the saucepan from the heat and let the sweet chili sauce cool for a few minutes before serving.
Serving the Dish

Plate the Tofu
Arrange the crispy fried tofu on a serving platter.

Serve the crispy tofu warm with the sweet chili sauce on the side for dipping.
