Prepare the Soup Base

Prep the Lemongrass
Remove the outer layers of the lemongrass stalks and smash the stalks with the back of a knife to release their flavor.

Cook the Base
In a large pot, combine the water, vegetable broth, smashed lemongrass, chili paste, soy sauce, lime juice, and sugar. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat and let the soup simmer for about 15 minutes to allow the flavors to meld.

Strain the Broth
After simmering, strain the broth to remove the lemongrass pieces and any solid ingredients, returning the liquid back to the pot.
Prepare Noodles and Serve

Cook the Noodles
In a separate pot, cook the rice noodles according to the package instructions until tender. Drain and set aside.

Add Toppings
To the strained soup, add the sliced onions and let them cook for 2-3 minutes until slightly softened.

Assemble the Bowl
Divide the cooked rice noodles into bowls. Pour the hot soup over the noodles, ensuring each bowl gets some onions.

Top each bowl with chopped peanuts, bean sprouts, cilantro, and fresh chili slices as per taste.

Serve the sour and spicy noodle soup hot, with extra lime wedges on the side if desired.
