Cook the Shrimp
In a pot of boiling water, cook the shrimp for about 2-3 minutes until they turn pink. Drain and set aside to cool.

Prepare Rice Noodles
Cook the rice noodles according to package instructions. Once cooked, drain and rinse under cold water. Set aside.

Chop Fresh Herbs
Chop the cilantro and basil leaves. Set aside for assembly.
Assembling the Summer Rolls

Soak Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and lay it flat on a clean surface.

Fill the Roll
In the center of the rice paper, place a small amount of lettuce, cucumber, carrot, rice noodles, shrimp, cilantro, and basil.

Roll It Up
Fold the sides of the rice paper over the filling, then roll from the bottom up to enclose the filling tightly. Repeat with remaining wrappers and ingredients.

In a small bowl, whisk together soy sauce, peanut butter, honey, lime juice, and water until smooth and well combined.
