Preparation of Vegetables

    Prepare the Cucumber

    Wash the cucumber thoroughly, then slice it into thin strips. Set aside.

    Prepare the Carrot

    Peel the carrot and cut it into thin julienne strips. Set aside.

    Prepare the Cilantro

    Rinse the cilantro under cold water and pat dry. Keep the leaves intact and set aside.

Cooking Noodles

    Cook the Noodles

    Bring a pot of water to a boil. Add the rice vermicelli noodles and cook according to package instructions, usually about 3-5 minutes until tender. Drain and rinse under cold water to stop the cooking process.

Assembling the Rolls

    Soften the Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Remove and let excess water drip off.

    Fill the Roll

    Place a lettuce leaf on the softened rice paper, then add a small amount of noodles, cucumber strips, carrot strips, and cilantro on top of the lettuce. Be careful not to overfill.

    Roll the Paper

    Fold the sides of the rice paper over the filling, then roll from the bottom up tightly to form a spring roll. Repeat with the remaining rice paper and filling.

Preparing the Dipping Sauce

    Combine Sauce Ingredients

    In a small bowl, combine soy sauce, peanut butter, honey, water, sesame oil, and chili flakes. Mix well until smooth and creamy.
