Marinating Duck

Prepare the Duck
Season the duck breast with salt, black pepper, and lime juice. Allow it to marinate for at least 30 minutes.
Cooking the Curry

Sauté Aromatics
In a large skillet or wok, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, and minced ginger. Sauté for about 3-4 minutes until fragrant.

Add Curry Paste
Stir in the red curry paste and cook for an additional 2 minutes, allowing the flavors to meld.

Incorporate Coconut Milk
Pour in the coconut milk and stir well to combine with the curry paste. Bring to a gentle simmer.

Add Pineapple
Add the pineapple chunks to the skillet and let them cook in the curry sauce for about 5 minutes.

Cook the Duck
In a separate pan, sear the marinated duck breasts skin-side down for 5-7 minutes until crispy. Flip and cook for another 5 minutes. Slice the duck and add it to the curry.

Finish the Dish
Gently stir the sliced duck into the curry, allowing it to warm through for an additional 2-3 minutes. Stir in the fresh basil leaves just before serving.

Serve the pineapple duck curry hot, garnished with sliced red chili if desired. It pairs well with steamed rice.
